Serves: 3                Time: 10-15 minutes

Fresh and tasty, this recipe is perfect for summer when you want tacos, but aren’t feeling chicken or beef. The key is to use a light white fish, like Alaskan cod. The fish is cooked in a skillet with salt, paprika, cumin, black pepper, and lime juice. Meanwhile, you soften up the corn tortillas in another skillet. For taco toppings, cabbage, tomatoes, cilantro, and onions are delicious. You can also leave off the raw onion if you want.

1 pound chopped Alaskan Cod

1 teaspoon salt

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon black pepper

One lime’s worth of juice

6 corn tortillas

1 cup shredded cabbage

½ cup chopped tomatoes

⅓ cup chopped fresh cilantro

⅓ cup chopped onion (optional)

  1. Prepare a skillet with a cooking spray and heat over medium-high.
  2. Add fish, seasonings, and lime juice.
  3. Cook and stir for 10-15 minutes, until fish is cooked through.
  4. While that cooks, heat another skillet.
  5. Add tortillas to soften up; when dark spots appear, move to a sheet of foil. Wrap after each tortilla is added, so they stay warm.
  1. To assemble tacos, divide fish among the tortillas, and top with cabbage, tomatoes, cilantro, and onion if you like raw onion.
  1. Enjoy!
